Crispy banana lumpia coated in caramelized sugar — a classic Filipino dessert. Saba (plantain) bananas are rolled with ripe jackfruit in lumpia wrappers, air-fried until golden, then dipped in melted sugar for a shiny, crunchy finish.
6 saba bananas (plantains) — or Thai bananas / regular bananas
1 cup ripe jackfruit, thinly sliced
1 1/2 cups brown sugar (for coating)
12 lumpia wrappers
1 cup white granulated sugar (for caramel)
Water (small dabs, for sealing wrappers)
Instructions
Step 1
Prepare bananas: if using saba/plantains, cut each banana in half lengthwise. If using regular bananas, cut each banana in half and then each half in half lengthwise (to make thinner pieces).
Step 2
Slice the ripe jackfruit into thin strips.
Step 3
Pour the brown sugar into a shallow bowl or plate. Roll each banana piece in the brown sugar until fully coated.
Step 4
Place a sugar-coated banana piece near one edge of a lumpia wrapper. Top with a few strips of jackfruit.
Step 5
Roll the wrapper tightly around the banana and jackfruit, folding in the sides as you go. Use small dabs of water to seal the edge.
Step 6
Preheat the air fryer to 350°F (175°C). Arrange the rolled turon in the air fryer basket/tray in a single layer, leaving space between each piece.
Step 7
Air-fry at 350°F for 5 minutes. Flip each turon and continue air-frying for another 3 minutes, or until the wrappers are golden and crispy.
Step 8
While the turon air-fries, make the caramel: place the 1 cup white sugar in a small saucepan and melt over medium-low heat, stirring as needed, until it becomes a golden, syrupy caramel.
Step 9
Remove the caramel from heat. Working carefully (hot caramel will be very hot), roll each cooked turon in the caramel so it becomes evenly coated.
Step 10
Place coated turon on a metal rack or wax/parchment paper to allow the caramel to harden.

Let the turon cool slightly before serving — enjoy while still warm and crispy.
