Place the roast in a large oven-safe pot or Dutch oven.

Add the grated apple, gochujang, diced onion, minced garlic, minced ginger, honey, apple cider vinegar, beef broth, soy sauce, and chopped kimchi (if using) to the pot. Stir or spoon some of the sauce around the roast so the flavors are evenly distributed.

Cover the pot with a lid and transfer to the preheated oven. Braise for about 4 hours, until the beef is very tender and easily pulls apart with a fork.

Remove the pot from the oven. Transfer the roast to a cutting board or platter and shred the meat with two forks.

Return the shredded beef to the pot and stir into the braising liquid to coat and absorb extra flavor. Taste and adjust seasoning if needed.
